Holiday Baking: Peanut Butter Chocolate Thumbprints

Whether you’ve been naughty or nice, these fancy little treats will win Santa’s heart!  Merging chocolate and peanut butter how could you possibly resist?!

Ingredients:

  1. 1 3/4 cups of Flour
  2. 8 Tbls of unsalted butter, cut into 1 Tbsp pieces and softened
  3. 4 oz of semi sweet chocolate, coarsely chopped
  4. 3/4 cup of sugar
  5. 1/2 cup of creamy peanut butter
  6. 1 large egg
  7. 2 Tbls of milk
  8. 1 tsp of baking soda
  9. 1 tsp of vanilla
  10. 1/2 tsp of salt
  11. 16 mini Reese’s Peanut Butter cups, unwrapped

Method:

Preheat your oven to 375 degrees, and line two baking sheets with wax paper.

Place the flour, butter, chocolate, and 1/2 cup of sugar, the peanut butter, egg, milk, baking soda, vanilla, and salt in the bowl or your kitchen aid mixer with a fitted paddle, then beat on medium for 10 seconds, until a dough forms.  Remove the bowl from the mixer.

Portion 3 level Tbls and scoop the dough for each blossom or thumbprint.  Use your hands to form each portion into a smooth ball.  Roll the balls in the remaining 1/4 cup of sugar, lightly coating each.

Place the balls on the baking sheets, about 4 inches apart lengthwise.  Place the baking into the oven and bake for 10 minutes, until lightly golden brown.

Remove from the oven and immediately top each Blossom with a peanut butter cup, pressing down so the cup is positioned about halfway into the cookie and creates cracks around the edges.
